Soy sausage with Minty Couscous

Some Nutritional Facts:  

It is very interesting to note that anything done correctly can be both healthy and delicious.  this is definitely one of the favorites with children simply because it is not only delicious but rather packed with nutrition.  Firstly the Soy sausages.  As you know there are many benefits to Soy due to the content of lecithin, high in fiber and protein.  secondly,  Couscous like all other small grains are full of proteins and vitamin B.

 

 

Ingredients

5 tbsp mint chopped

2 tomatoes chopped

5 lemon squeezed for juice

1 tbsp extra virgin oil

6 soy sausages sliced into about 1 inch thick sideways

1/2 red pepper chopped

salt and pepper to taste

1/2 cup of extra virgin oil

250g couccous

 

 

Method

1. Heat the oil in the pan and cook the sausages. 

2.  Add the couscous into a separate pan and add 2 times the volume of water. Leave the couscous to cook.  You can tell it it cook when the couscous is fully swelled

3. Combine the chopped vegetables, sausages olive oil and stir it together with the lemon juice.
