Red Spinach & Asparagus Noodles Recipe

Some Nutritional Facts:  Spinach has a high content in Lutien and Zeaxanthin.  This is helpful for the retinas.  Asparagus is also high in folic acid.  Both vegetables have high anti-oxidants.  This is another wonderful method to introduce children to greens.

 

Ingredients

500g whole wheat pasta

250g asparagus chopped into lengths of 8cm

250g red spinach chopped

50g of chicken breast fillet (sliced thinly)

1 tbsp grape seed oil

5g chopped garlic

5g chopped ginger

10g shelled prawns

2 tbsp dark soy sauce

1 tbsp light soy sauce

Basil to garnish

 

Method

1. Boil the pasta until soft and drain it.  Wash the pasta so as to stop it from cooking further.  When cooking

2. Add oil in the frying pan.  Firstly,  add the garlic, ginger prawns and chicken.  When prawn and chicken is cooked,  add the asparagus and spinach.

3.  Finally,  add the noodles and both soy sauces.

4. Garnish with Basil on top
