Chicken Noodle Soup

Some Nutritional Facts:  While this can be a meal on its own, the key hear is to make the soup as nutritious as possible. Chinese spinach is packed with chlorophyll and vitamin E.  Again,  with this recipe one can introduce children to vegetables and mushrooms.

 

Ingredients

25g of egg noodle

20g chopped Chinese spinach

1/4 small chicken for the soup

10g fresh shitake mushroom

1 tbsp light soy sauce

1 tbsp sesame oil

 

 

Method

1. Measure out 2 big bowls of water and put it in the pot to boil with the chicken pieces. Once the meat is cooked.  De-bone the chicken.  Take out the meat and let the bone cook to get the stock.  Cook it approximately 2 hours.

2. In the meantime,  blanch the noodles in boiling water for 5 to 7 minutes.  Strain the noodles.  Put 1 tbsp of sesame oil on the noodles.

3. Add soy sauce in to the stock.  Also add the spinach and and mushroom.  Let it boil for a further 30 seconds to cook both the spinach and mushroom.  Make sure as not to over cook the vegetables as you will lose the vitamins.
