Sweet Corn Soup Recipe

Some Nutritional Facts:  

Sweet corn has a lot of folic acids and folates which are primarily vitamin B.  It is also a good source in iron and potassium.  One other property the sweet corn has is that it helps people with poor eyesight by strengthening the retina.

 

 

Ingredients

25g/1 oz soy margarine
2 medium onions, chopped

2 tbsp arrowroot powder
325g/11 14oz tinned sweetcorn
3 cups/700m1/141 vegetable or
chicken stock
1 cup/200m1/7f1 oz soy milk
salt and black pepper
croutons for garnish

Method

1. Lightly fry the chopped onions with the soy margarine.  Once fragrant add the stock together with the sweetcorn.

2. Let the soup simmer for about 20 minutes and add the soy milk.  Add the arrowroot powder to thicken the soup if you like it slightly thicker.
