Pumpkin Soup Recipe

Some Nutritional Facts:  Pumpkin is low in calorie and high in minerals and nutrients. 

 

Ingredients

1 big onion cup

1 small pumpkin (1/2 medium size pumpkin) seeded and chopped.

1 cup of Soya Milk (full cream)

4 tbsp soya cream

1 carrot

1 pot of water

1 chicken rib cage

Chives for garnishing

 

Method

1. Add onion, pumpkin, carrot and chicken rib cage into a pot of boiling water.  Let it boil for about 2 hours.

Remove and blend the onion, pumpkin and carrots and put it back into the stock. 

2. Remove the chicken rib cage and remove the meat.  Put it back into the soup

add the soy milk and soy cream
