Pasta Beans Soup Recipe

Some Nutritional Facts:  This is a very nutritious soup with a special Mediterranean flavor that is excellent for a cold winter's night.  Try to use fresh beans and avoid tinned beans.  Also,  there are also a variety of whole meal pastas which will be packed with high fiber.  Let's talk about zucchini as a vegetable.  Not very widely used but not known is that it is filled with folic acid, potassium and beta-carotine.

 

Ingredients

2 Tbsp extra-virgin olive oil
1 medium onion, chopped
2 cloves garlic, chopped
1 zucchini  chopped
25g red kidney beans soaked overnight
25g yellow soy beans soaked overnight
5 cups of vegetable stock
Salt and pepper
1 tomato, peeled and chopped
25g macaroni
Basil leaves, for garnish

 

Method

1 Saute the chopped onions and garlic until brown.  Add in and fry the zucchini until soft.
2 Add the beans and stock. Season with salt and pepper and let it simmer for 1 hour
3 Add the chopped tomato and pasta
4 Garnish with the basil leaves.
