Some Nutritional Facts:
Sweet
corn has a lot of folic acids and folates which are primarily
vitamin B. It is also a good source in iron and potassium.
One other property the sweet corn has is that it helps people with
poor eyesight by strengthening the retina.
Ingredients
2 tbsp
soy margarine
2 onions chopped
4 sweet corn (remove the corns from the cob)
3 cups chicken/meat stock
10g of
bacon bits
1 cup Oat milk
salt and black pepper
croutons for garnish
Method
1. Saute the chopped onions with the
bacon bits for 2 to 3 minutes. Add the sweet corn and continue
under slow heat until sweet corn is half cooked.
2. Add in the chicken/meat stock.
Let it boil for around half an hour.
3. Remove the sweet corn and blend it
in a food processor.
4. Return to the pot and add the oat
milk. Add salt and pepper
5.Garnish with the croutons
