Lotus Root Soup Recipe

Some Nutritional Facts:  Lotus roots has lots of vitamin C and dietary fiber. It also has a balance of other minerals such as manganese, phosphorus, copper and potassium.  Black Soy Beans on the other hand is very high in protein.  This combination makes it an excellent choice for toddlers.

 

Ingredients

1/4 cup black soy beans

20g of lotus roots sliced thinly

10 dried and pitted red dates

1 tbsp dried wolfberry

250 spare ribs

 

 

Method

1. Boil a pot of water.  Add the spare ribs in and let it boil on slow heat for 4 hours.  For best results, either use a double boiler or slow cooker.  After that,  add the rest of the ingredients and let it continue to boil for another hour.  Add salt to taste.
