Some Nutritional Facts: Fennel
is packed with Vitamin B and namely folates and folic acid.
Although soy cheese resembles any common type of cheese, it
does not taste exactly like one. It actually taste better! For
one, it does not give you that fullness feeling after your 3rd
bite. Soy cheese is also fat free.
Ingredients
5 Tbsp
sunflower seed oil
1 garlic minced.
1 leek, chopped
2 large fennel bulbs, chopped
5 cups of chicken stock
4 Tbsp grated soy cheese
Salt
and Pepper
Method
1 Melt the margarine in a pan, then add the
garlic, leek and fennel. fry for 5 minutes.
2 Add the stock and bring to a boil. Simmer
for 30 minutes. Season to taste with the salt
and pepper.
3 Allow the soup to cool slightly, then purée
until smooth in a blender or food processor.
4 Return the soup to the pan and reheat. Add
the cheese and garnish with the parsley.
