Carrot and Arborio Rice Soup Recipe

Some Nutritional Facts:  

I feature this soup because its simple and I like to cook with Italian Arborio Rice.  This type of rice is high in fiber and is a good nutritional source of natural iron which is very essential.  The walnuts' nutrition can be found here

 

 

Ingredients

15g/1 oz soya margarine
2 medium onions, chopped

600g carrots, preferably young ones, sliced.
3 cups/700m1/141 vegetable or
chicken stock
1 cup/200m1/7f1 oz soy milk
salt and black pepper

2 tbsp of roasted chopped walnuts
croutons for garnish

 

Method

1. Lightly fry the onions with the soy margarine until fragrant. Add the stock and the carrots.  Let it boil for 1 hour. 

2.  Remove the carrots and blend it.  Return it to the boiling soup. 

3.  Add in the soy milk.

4. Garnish with chopped walnuts and croutons.
